Make Ahead Meals For the Freezer - Part I

Due to our hectic modern lifestyles, many cooks don't have the time to spend in the kitchen that they would like, but still want to provide good home cooked meals for their families. This is when our freezers can be put to good use. Many meals and dishes can be made ahead and frozen for use on a busy day. They just need to be thawed and reheated, and will taste as fresh as the day they were made. A wise cook will prepare enough for 2 dishes when they have time to cook, serve one the same day and place the other one in the freezer. This is a fine way to provide a good meal for your family on a busy day, and also save the expense of picking up fast food or ordering in.

I plan to do a series of recipes that work well as make ahead dishes and meals. When you are ready to use them, just remove them from the freezer and place them in the refrigerator to thaw. It's best to do this the night before you plan to use them, or in the morning before leaving for work. When you come home, just pop them in the oven or reheat on the stove. In a pinch, you can also thaw them in the microwave, although this isn't a recommended method. Some parts of the dish can become overdone.

The following recipe makes about 6 pints of cooked ground beef mixture that can be stored in the freezer for up to 6 months in air-tight containers. Be sure to label and date the containers when placing them in the freezer. The beef mixture can be used to whip up a meal in just a few minutes. Recipes for using the beef mixture will follow.

Ground Beef Mix

4 pounds ground beef
2 cups chopped onions
2 cups chopped celery
1 clove garlic, chopped fine
4 teaspoons salt
2 teaspoons ground black pepper
3 tablespoons Worcestershire sauce
1/4 cup vegetable oil
28 ounces of ketchup

1. Heat oil in a large skillet over medium heat. Add onions, celery and garlic. Cook until tender, stirring often. Add crumbled ground beef and cook until ground beef is lightly brown and no longer pink. Drain excess fat.

2. Add all remaining ingredients. Simmer over low heat for 20 minutes, stirring occasionally. Remove from heat and place meat mixture in refrigerator to cool.

3. Once beef mixture is cool, pack in airtight containers and freeze.

The following recipe is simple and makes a Manwich type of sandwich.

Ground Beef Filled Buns

3 cups Ground Beef Mix, thawed
8 hot buttered buns

1. Heat thawed mix in a saucepan over low to medium heat until thoroughly heated through.

2. Serve between hot buttered buns.

The following recipe makes good use of leftover vegetables.

Ground Beef Noodle Casserole

2 cups Ground Beef Mix, thawed
1 1/2 cups dry noodles, uncooked
1 cup canned or leftover vegetables of your choice
1/2 cup grated cheese of your choice
1/2 teaspoon oregano

1. Cook noodles in boiling water according to package directions. Drain.

2. Heat thawed mix in skillet over medium-low. Stir in oregano. Stir in the vegetables and noodles. Sprinkle cheese over the top.

3. Reduce heat to low and cover tightly with lid. Heat until the cheese melts. Serves 4 to 6.

Ground Beef Mix Stuffed Bell Peppers

1 cup cooked white rice
2 cups Ground Beef Mix, thawed
1 cup canned corn
8 bell peppers, cored and seeds removed

1. Preheat oven to 350 F.

2. Combine rice, thawed mix and corn. Mix well.

3. Fill each bell pepper with mixture. Place upright in a glass baking dish. Place in preheated oven and bake for 30 minutes. Serves 8.

If you have trouble with your ice maker, you can try to diagnose the issue yourself before calling a repair man. A good place to start is the manual for the appliance; it's always easier when you have the service manual for the machine. I've listed below some of the most common issues with ice makers and their solutions.

A simple yet very common problem is it may be turned off. There will be a wire along the right side of the ice maker that looks like a clothes hanger. If the wire is in the upright position the ice maker is most likely turned off. If this is the case try one of these:

If your appliance has a small red plastic lever, push it down to lower the wire.

If it has a plastic lever, just lower the wire.

In either case, it should start producing ice again. The temperature in the freezer needs to be 8 degrees Fahrenheit or lower so check for this. If it is above this temperature the appliance will not cycle on and produce ice.

Another possible reason for no ice is the tube may be blocked. If so you will need to melt the blockage with a hair dryer. You will need to e careful and not apply to much heat to the plastic, it can melt. Also it may be necessary to replace the water shut off valve and or the water inlet valve.

Ice maker head assembly may be broken is one last place to check. Look to see if the gears have broken. There are small plastic arms that lean up against the ice rake, check to see if they are broken. The head assembly is a modular piece so if it is found to be broken you can just replace the parts.

These are some common ice maker troubleshooting tips. It is best to read the manual or instructions carefully when trying to fix appliances. You could potentially damage the system event more if you try to fix it without knowing how.

Lip Service - Fishing Lure Makers Guide To Choosing The Right Material For Bibs and Lips

A common decision when making fishing lures is what material to use for the diving lips/bibs. I've seen all kinds of materials used from all sorts of sources, but there are probably four common ones:

• Perspex is a clear plastic that can be bought cheaply in sheet form of various thicknesses at most hardware stores

• Polycarbonate (Lexan) is another clear plastic that can be purchased in sheets of various thickness, although most hardware stored in my area don't carry it, so you'll need to find a source.

• Aluminum sheet, again available through hardware stores in various thicknesses

• Stainless steel sheet. The best source of SS sheet for lure making is probably marine engineers (you may get scraps and offcuts for free, or at least cheap.

But what are the advantages and disadvantages of each and when would you choose one over another? To some degree it comes down to personal preference, but here are a few thoughts that might help you decide:

Perspex. I use Perspex on the majority of my small to medium lures, simply because it's cheap, easy to work, readily available and I've never had a problem with it. Because Perspex is transparent, a fish approaching the lure from below doesn't see the bib, so it doesn't add to the overall profile of the lure. This is advantageous when you are making fishing lures to imitate small baitfish.

Lure makers who intend to put the towpoint actually in a Perspex bib (as opposed to in the nose of the lure itself) might want to increase the thickness of the material selected to reduce the chances of the bib cracking during battle. Personally, for bibs that contain the towpoint I prefer Lexan.

I've read claims that perspex can crack in cold water, but I've never had a Perspex bib on a custom fishing lure fail and I'm not personally aware of lure maker who has. I've fished some pretty cold waters in alpine areas, too. You can try putting some of your Perspex bib material into the freezer compartment for n hour or so, then try tapping it lightly with a hammer to see how much force it takes to crack it. That being said, if you regularly fish in freezing or near freezing conditions, why not choose Lexan instead? That way you won't have doubts about whether your home made lure will cope with the stress of a fight with a large predator!

Perspex certainly runs a poor second Lexan if you make wooden lures that are intended to be tossed hard against structure such as rock and bridge pylons. Unfortunately it simply won't take the knocks that polycarbonate will.

Lexan. I've seen some pro fishing lure makers advertise that their lures have "bulletproof" bibs (Lexan is the material used in bullet proof glass). Seriously though, who cares? I'd buy a lure that will catch fish before I'd buy one that can take a bullet!

Jokes aside, Lexan is great for lure makers! In most ways, Lexan is very similar to Perspex, but it does have two major advantages:

1. It doesn't have the problem of becoming brittle in the cold that Perspex (allegedly) does.

2. It's much, much tougher and less brittle than Perspex. We've all heard the story of the police turning up at the scene of a burglary to find the offender unconscious on the sidewalk next to a brick? Surveillance cameras showed he had hurled a brick at a Lexan window, only to have it bounce back and hit him in the head!

Until relatively recently, Lexan was hard to get in sheet form and in small quantities, but these days that's not such a problem. Google around, I find 1.2 to 2mm thick sheet the best for making fishing lures.

Aluminum. The obvious time to use aluminum for fishing lure bibs is when they are going to be thrown into some really tough country or at a tough adversary, particularly if the towpoint is attached directly to the bib.

Aluminum has the advantage of adding weight at the front of the lure, which ensures the lure stays upright and the bib is under water when the retrieve commences. This weight forward arrangement also results in fishing lures that swim with a slightly head down attitude, which allows them to bump over logs and snags better without the hooks hitting the snags.

Being opaque, it also has the effect of increasing the overall profile of the lure when viewed from below. This can be a disadvantage when you need a small profile lure, but can also be an advantage, allowing the angler to get away with a smaller lure that creates less drag on the rod but has the appearance to the fish of being larger.

Aluminum can be bent into the required shape, giving the lure maker additional flexibility with bib design.

Stainless steel

As a lure making material, stainless steel has many of the advantages (and disadvantages) as aluminum. Additional advantages she using stainless steel are that it can give your lures some extra flash, particularly useful for saltwater applications, and that it is very strong and durable under tough fishing conditions.

On the flip side, stainless steel can be very hard to shape and work and can be expensive to buy. Be sure to look for 316 (marine grade) stainless steel, or corrosion will be a problem.

So that's it in a nutshell. I don't believe that any one material is better than the other. For my money, it's simply horses for courses.

The first thing you will need to know is what you are planning on running in this time of emergency. The fewer the items or the smaller the amperage, the smaller or least costly inverter will be needed. I will give a table of items and their average power uses below followed by a simple formula that will give you an idea of the size of inverter you will need.

If the appliance you are planning on using is listed in watts, just go ahead and use that number. If it is listed in amps you just need to use this simple formula: volts (120) X amps (listed on device) = watts. This will give you the amount of watts the appliance will be using. So if you had a 3 amp appliance, and you wanted to find the watts, the formula would be: 120 (volts) X 3 (amps) = 360 watts.

You would then total all of the watts that you will be using and come up with a number. Lets say your total watts usage is 500 watts. If that's the case it would be a good idea to get a 750 watt inverter. Always get a larger size than what you think you will need, it may come in handy.

Your next step will be to determine where your power supply is going to come from. If it is for emergency purposes there is a very good chance that it will be coming from a battery hooked up to your vehicle, or you may be a little better prepared and have a bank of batteries hooked up in a parallel fashion. Since most people reading this are probably unfamiliar with creating a battery bank I will just cover running the inverter from the vehicle. The main thing to know is what type of battery you will be using. It is suggested that you have a deep cycle battery or those that are used for trolling motors or golf carts and that you get as many amp hours as your budget allows. A few years back I was able to go 11 days using a 750w inverter and a 120amp hour deep cycle battery attached to my car. I had to run the car for 10 minutes every 2 hours to run everything that I had hooked up which was a laptop, 13" color tv, direct tv receiver, modem for the laptop, 40w light, and a small box fan. That doesn't sound like much, but I thought I was staying at the Ritz Carlton compared to most of my neighbors.

The last thing you need to know is how long will your power supply (battery) last before it needs recharging. First you will need to know the wattage of all the appliances. Lets say we have 480 total watts of power being used, and we are running our inverter off of a 12 volt battery attached to the car. Next we have to convert this number so that we know how many amps are being used. We do this by taking the watts (480) and dividing it by 12 (volts of the battery) and come up with 40 amps. The formula is: watts / volts = amps. If we have a 120 amp hour battery we would divide 120 (amp hours) by 40 (amps) and get 3 hours before the battery is dead. It is recommended not to drain a battery below 50% of its capacity so you may want to divide the 3 hour in half giving you 1 1/2 hour before starting the car up to recharge the battery.

How To Defrost a Freezer

Defrosting a freezer is an annoying job that you just have to do every once in a while. No one really likes to do. Here are the instructions on how to make this as simple and painless as possible.

Obviously, you must first turn your freezer off by unplugging it from the power supply. You then must empty the freezer by removing all of the frozen goods from the freezer. It is important that you prevent thawing. This can be done by wrapping your items in newspaper and placing them in a cool bag. You will want to store this in the coldest part of the house. If you have any drawers or racks in your freezer this is the time to remove those as well. You will also want to take out the ice cube trays at this time too.

In order to prevent a puddle in the front of your freezer you can put newspapers around the base of the freezer and then a towel. This will soak up the water as the ice melts through the thawing process. The newspaper is helpful for this job as you can slide them under the freezer. The towel is important because this will be more absorbent.

Now it is time to start the thawing process. The simplest way to do this is to fill a bowl of boiling water and place it in the freezer. From here you will want to take a rag and submerge it in the hot water and place it onto the ice covered shelves. This will help to hurry along the melting process.

From here you will want to wash the removable items that you removed from the freezer. If you can, you will want to take the drawers to the sink. It is much easier to clean this items in the sink and remove any remaining ice. From here you will want to fill the sink completely with hot water. You will also want to use some dish washing detergent to make the process easier. From here, use a sponge to wipe out the drawers one at a time. This is a great time to wash out the ice cube trays too. You will want to give everything one final rinse.

After about 15 to 20 minutes you will need to want to check the progress of the freezer. If you can at this time, knock out any ice chunks. Keep replacing the bowl of boiling water as needed in the freezer. Keep dabbing the hot water over the icy areas. Move the bowl around to the shelves with the most ice as needed. After a while the warm steam will to the trice and finally defrost this stubborn layer.

This process can take up to a couple of hours but once all of the ice is gone it is time to clean the freezer. This can be done by billing a bowl of hot water and a small amount of liquid soap. You will then use a cloth to wipe down the inside of the freezer. You will want to dry it thoroughly and then place all items back in the freezer. This can be a tedious process but once you are finished you will definitely enjoy the fruits of your labor.

You can have the theme of your Halloween party be The Cullen's, The Volturi, Quileute pack members or any of the Forks residents. Have a Vampire theme Halloween costume party and invite all your friends who are Twilight fans...and even those who aren't. There are so many costume ideas you can get from Stephanie Meyer's Vampire Saga. Dress like Bella Swan going to the prom, or like Alice Cullen at Bella's High School graduation party.

There's also James, Laurent and Victoria to get some fun Halloween costume ideas from. You can be Jane of the Volturi and your boyfriend can be Alex or Caius. Your more inventive car loving friends can come in car costumes. They can get some inspiration from Bella's red truck, Edward's Volvo or even Rosalie's red BMW M3 convertible. Cars can be made out of cardboard boxes and homemade box costumes are not that hard to make.

You can have a make up counter set up and let some of your talented friends become Vampire makeup artists. That will be a great time to take some photographs. Imagine how much fun it will be taking these pics. And they will make for some great photos! Pale shades of makeup, purple eye shadow, shimmery make up will be great accessories at your Vampire make up center. You can also add a little red cake decorating gel in case anyone wants to look like they've just had a little snack.

Make sure to play the movie soundtrack at your party. A little Muse, Linkin Park, Paramore and don't forget Rob Pattinson to get everyone into the Zone. Put out your books with their distinctive colors and hang up some posters of your favorite characters, whether it's Bella, Edward, Jacob or Alice, it will look festive. Twinkle lights and lots of black and red party ware will help you bring the feel of the novels to your party.

You can find and print out some bookmarks to give each of your guests. You can find these bookmarks with pictures of Kristin Stewart, Rob Pattinson, Ashley Greene and of course,Taylor Lautner, online and they're free. They would be just perfect as a party Thank You gift!

Candy Apples would make a great Twilight party favor idea for your Halloween bash, or just have them out as a party treat. Red Punch looks like something Vampires would drink. It is easy to make a batch with some ginger ale and cranberry juice. Put some raisins in your ice cube trays to add a little Halloween fun with your drinks. It will look like a bug in each ice cube. You can also get a rubber glove (make sure it's the non-allergic type) fill it with water and seal the top. Set it upright in the freezer so the water doesn't leak out. When it's frozen, take it out of the glove and you will have an Ice Hand to float in your punch bowl. All your party guests will get a good laugh over that.

Serve easy party food. You can order pizza, it's a great party food idea. It's easy to serve and to eat. Everyone loves Pizza! Have some bowls of salsa and chips, and of course, you will need some cake or cupcakes for dessert. Put an image of Bella and Edward, or the entire Twilight cast right on top of your cake or cupcakes. I'll tell you how in the resource box at the end of this article! It's easy to decorate your own party cake or cupcakes. And it's cheaper to make your own party cake, rather than order one from the bakery.

You can also use your dessert, cupcakes, as a party activity for your friends. Let them design their own Twilight cupcake. You provide the cupcakes and the decorations for them and let your friends use their imaginations to decorate their own. Have a Twilight Cupcake Decorating Contest and give the winner a "Golden Onion" or a shiny "Red Apple" as a game prize.

If you include the Werewolves in your party invitations you could always have a Werewolf Howling Contest. Why not see if some of the Vampires can't give the Quileute Pack some competition in the Wolf howling category.

Twilight Trivia or Jeopardy is a must at this Halloween party based on the Vampire Human love story. Get all your friends to think of the most difficult trivia question they know, before the party. Use their questions during your game...let's see how hard they are to answer! Make sure you have a second Golden Onion to give out as a trivia game prize!

Dill-pickled green tomatoes make great appetizers. Numerous recipes for making them can be found in cook books and on the Internet. We use the fairly simple recipe below. It emphasizes the proportion and type of vinegar used to control the strength of the pickling flavor combined with the dill flavor of the green-tomato-and-celery product.

Pickling brines give varying tastes to different people. For example, a product pickled in a strong vinegar brine can cause the taster to blow any choking acetic-acid fumes from his or her nose and throat after sampling it. Still other tasters might like that same flavor without feeling the effects of the vinegar or other additives.

Conversely, the brines having a weaker vinegar portion combined with flavoring spices or further added products will yield milder more articulate flavors to its pickled products. Some recipes will recommend adding a few spices to make the pickling flavor hot or tasty. Others call for the addition of plain or brown sugar to make the flavor sweet. Still others say the following items can be added to the pickled green tomatoes: garlic, celery, onion, hot or sweet peppers (red, yellow or green), Cayenne pepper, carrots, allspice, pickling spice, mixed-pickling spices, black peppercorns, celery seed, dill heads or seed, mustard seed, dry mustard, cherry leaves, slacked lime, cumin, turmeric, lemon juice, ginger, cinnamon, or sugar. 

Still, the pickling flavor coming from a brine recipe is also controlled by the proportion and kind of vinegar used in it. A strong recipe will add no water to the vinegar:salt brine. A medium-strength recipe will use a 1:1 cider-or-white vinegar:water proportion for its brine, the white one being the mildest of the two. A weak or mild recipe will call for a 1:2 or 1:3 cider-or-white vinegar:water proportion. Also, in certain instances, a select wine vinegar might be used to give a preferred taste, probably mixed in with white vinegar.

In the following recipe, a 1:2 proportion together with a few additives gives a fairly mild, lingering and slightly hot, dill flavor to its green-tomato-and-celery product.

Dill-Pickled Green Tomatoes -- (by City Sandy)

5-pounds small firm green tomatoes, (grape or cherry with any stems still attached, or larger ones, quartered), washed well 1-head of celery, washedTo make the brine, mix the following ingredients together in a pan, and bring to a boil for five minutes.

2-quarts water 1-quart vinegar (cider or white) 1-cup salt (plain or cannery)Pack the tomatoes into standard sterilized pint jars together with the following items in each.

1-clove garlic 1-stalk diced celery (1/2-inch) 1-hot pepper of choice (green or red) 1/2-to-1-tablespoon dill seed, or to tasteFill the jars to one-forth-inch from the top with the hot brine. Seal with canning lids, and mix the contents by rotating the jar a few times. Let cool in upright position. Store at room temperature 30 days before serving. Makes 10-12 pints.

How to Freeze Fresh Vegetables From Your Garden

Every summer season, we plant a large garden in our backyard. As we became more proficient with our gardening skills, the larger our garden grew.

A few years ago, we decided to invest in a large upright freezer so that we could preserve our fresh vegetables for later use. Freezing is the most time efficient way to preserve foods at home. It is important to note that freezing does not improve the quality of foods, but when properly done it can preserve most of the quality of the fresh product.

Here are the steps that you need to take so you can freeze your own vegetables.

1. Choose vegetables that are at their peak of flavor and texture. Avoid any over-mature vegetables or ones that have any type of damage.

2. Wash your vegetables under cold running water. If desired, you can purchase and use a fresh produce rinse to remove dirt, bacteria and pesticide residue that might be on your vegetables. Pat dry.

3. Peel, remove seeds and slice vegetables to the desired size.

4. Blanche vegetables in a large covered stockpot of boiling water. Different vegetables require a different length of blanching time.

Asparagus 2-3 minutes

5. As soon as blanching is complete, cool the vegetables quickly to stop the cooking process. To cool, drain the vegetables in a strainer, and then plunge into a container of ice water. Cool them for the same amount of time as they were blanched. Drain thoroughly, pat dry and freeze up to 9 months in re-useable plastic containers that are made for freezer use.

Great Lawns

This is a topic near and dear to my heart. Ask my wife and she will tell you I was obsessive over my lawn for the last two years... I can't disagree.

It all started with a new house. Typically a good thing right? Our first new house on a new cul-de-sac with 5 other new houses. We got the pick the colors and flooring and had some input in other things.

CONSTRUCTION TRAUMA

I came out to my front porch every morning and coached the little grasslings to grow up through the straw the contractors laid down. I looked through my bedroom window one morning and Woo Hoo, I could see green. Well the rest of that summer taught me that construction is hell on lawns and trees.

As I cleared away the straw, it revealed there were more bald spots than grass spots. And most of the bald spots had weeds already! The ground was terribly un-even and there were rocks everywhere! Big rocks, small rocks, medium rocks... lots of rocks!

Further investigation revealed that the construction crews took the fertile top layer of dirt for fill in other parts of the cul-de-sac. As we will discuss later, that top layer of dirt is very hard to replace and took decades to form. Now mine was probably under the black top of my neighbors' driveway.

We would learn later how much trees don't like the entire construction ruckus. They toughed it out for the first year and half like the tough five stories high pillars of rock you would expect. But then one by one, they made less leaves until it was obvious they were dead. We lost about ten trees. Of course every one of them directly around the house including the big majestic ones on the front lawn that defined the curb appeal of the house.

So here we are with a barren waste land of dead trees and a mange lawn filled with rocks and weeds.

THE MISTAKES

The first mistake I made was the classic, "try to do as little as possible until you realize its taking more time and money than if you just started from scratch in the first place".

Little by little

I brought in dump truck loads of dirt to try and level small sections. I bought little bags of lawn patch pellets for the bald spots. I bought tree spike nutrient things for the trees. I should have just hired a bulldozer to level the whole thing and then spread seed and straw.

So as I tried to patch and pick up rocks I started to do some research. My wife told me we had "clay soil". So I looked it up and found that Clay is like concrete. Its very dense, doesn't hold water, doesn't allow roots to breath or move.

Gypsum

The site said to add Gypsum. Little tiny pebbles that look like those volcanic rocks in your gas grill. The site said to put truck loads on your lawn with a spreader each year for about 3 years. The idea was they would work their way into the soil and create little pockets in the dense clay thus allowing the clay to breathe and hold moisture more like a sponge. Sounded great but most people I told what I was doing said it's a lie and the only thing you need is top soil (that stuff the contractors took away).

Earth Worms, Geese, and Sand

The opposite of clay soil is sand soil so I figured if I just added sand to my clay everything would be perfect. Nope... adding sand actually takes clay that may have some chance of being good soil some day and make it absolutely useless concrete.

I awoke one night with the perfect plan! Ill buy a couple wheel barrels full of earthworms! Their great right? They aerate the soil with little tunnels and they poop all over the place. That would surely make my soil good again and quick! Nope... further research told me that worms don't make the dirt good, good dirt makes the worms. Basically dropping worms on my lawn would be like putting them in the middle of a large empty parking lot.

That disappointment led me to think of geese. If I put a bunch of bread or whatever they eat on my lawn they would come and poop all over it. Nothing is better for grass than poop! My wife informed me that when geese do pick a spot to poop they come back to spot for ever. I wanted a little fertilizer, not a mine field for the rest of my life.

THE SAVIOR

My wife appreciates my obsessions because she knows they give me something to do. Hence keeping me out of trouble and out of her hair. But she doesn't like to see me in pain and losing is painful for me, especially when my opponent is dirt. So she bought me a book on lawns. Scotts Lawns Your Guide To A Beautiful Yard by Nick Christians.

Let me start by saying this is a great book and if you are obsessive like me, you should go buy it right away. With that said though... I was wary when I first opened the book as its very first piece of advice was to fertilize. Fertilize in the summer, fertilize in the fall, fertilize in the winter, fertilize in the spring, fertilize, fertilize, fertilize. Hmmm I thought, a book by Scotts lawn products telling me to fertilize. Great! Nobody actually cares about my lawn they just want me to buy gypsum and fertilizer and worms.

I was jumping to conclusions as you will see.

SOIL

The quality of your soil is the key if you haven't figured that out already. It's not the grass, or weeds, or watering. Good soil is the answer to 90% of your problems.

There are three main types of soil:

Clay soil - Clay is like concrete. Its very dense, doesn't hold water, doesn't allow roots to breath or move. Rain runs right over it eroding what ever blade of grass hasn't fought to grab hold yet. When it's hot and dry in the summer the clay soil dries out just like... well clay.

Sand soil - Sand is like mesh. It's very loose and airy. So loose and airy that it too does NOT hold water or nutrients. The water just runs right through it. It allows roots to breathe and move so much they can fall over. Rain can actually wash the soil away along with any grass that may have grown in it.

Loam - This is what you want! It even sounds good. Say it out loud... looooaam. This is the stuff that formed my top layer before it was scrapped away. This is the stuff that's under the leaves in the forest. That black soft dirt that been formed by decades of decaying leaves and plants. This soil takes the water from a rain storm and holds it like a sponge to slowly seep out over the dry days. This soil has nutrients and is firm enough to hold plants upright yet airy enough to let them breathe.

THE SECRETS

Okay so we determined that our soil is terrible. What now?

There are two fundamental issues with sand and clay soil. They don't have any nutrients and they don't hold things well (nutrients, roots, or water). So we simply need to build that layer of fertile soil back as quickly as possible and provide the soil with extra nutrients until that layer is built.

How? You guessed one of them. Fertilizer is the key to the nutrients. Organic material is the key to the fertile layer of soil.

GO NOW AND DO

Here is the step by step of what I eventually did to turn my lawn from a brown balding mess to the lush green envy of my neighbors. I have to give credit to the book (and my wife) for just about everything I am about to tell you.

Mulching Mower

This is absolutely imperative. Spend the most time and money on this one thing. I spent hours researching Consumer Reports to find the mower that mulches the best. It was a Toro push mower but may have changed since. You basically need to replace decades of missing organic material and the easiest material you have is grass clippings. A good mulcher will cut them up fine enough to decay much quicker.

Mow High and Often

Obviously the more grass you cut and mulch the quicker you will build up that layer. Cutting high encourages deep roots and healthy grass. It does NOT cause you to have to mow more often. Cutting grass short can actually do that.

Mulch The Leaves

Just like the grass clippings, chopped up leaves help to build that layer of organic material. I actually rake and blow leaves from the woods onto my lawn to mow over and chop up. If I could think of a way to have truck loads of leaves delivered to my lawn, I would. Think of leaves as free loam and fertilizer put together!

Soil Sample

Before you fertilize, you need to know what your soil is missing. Giving it a nutrient it already has too much of just sends you backwards.

Just about every community has a "Cooperative Extension" that does cheap soil samples. You fill a couple freezer bags with dirt from two different places in your lawn and bring them in with an application that says how big your lawn is, etc. If you don't have an Extension you can look on the web for soil samples.

What you get back is a map of what to give your soil. Soil needs three key ingredients, Nitrogen, Phosphorus, and Potassium. The report should tell you exactly how much of each your soil needs. In addition it will tell you if your soil is too acidic or too alkali.

Fertilizer

Fertilizer is what provides the three key nutrients above. And if you lawn is like mine... the book was right, fertilize, fertilize, fertilize! But be sure to use the right mix!

All fertilizer has a ratio on the package that tells you how much Nitrogen,
Phosphorus and Potassium it has. For instance a ratio of 50-25-25 indicates that half the bag is Nitrogen, a quarter is Phosphorus and the remaining quarter is Potassium. Bring your calculator to the store though as the numbers are never easy as I just used in my example.

My soil sample said that for my size lawn I needed:

45 pounds of Nitrogen but I should only put 15 pounds down at a time.

0 Phosphorus as it already had too much.

42 pounds of Potassium but I should only put 30 pounds down at a time.

Armed with this information I went to the store to buy fertilizer with a ratio of 15-0-30 or as close to that as I could get to a bag that had no phosphorus and twice as much potassium as nitrogen.

You will have to do some math (hence the calculator) to figure out the pounds you are actually putting down. For instance a 40lb bag with a ratio of 22-0-11 means that half the bag is Nitrogen so approximately 20lbs. I needed 15lbs so close enough. One bag was good for my nitrogen but I needed twice as much potassium so I really need a bag with a ratio of 11-0-22. Like I said, bring the calculator and get as close as you can.

Lime

The forth important ingredient to a good lawn is proper PH level. Remember my soil report said I needed 42lbs of potassium. Well it also said my soil is VERY acidic and needed 3,150 lbs of lime! Yes you read it right 3,150 lbs of lime, 750lbs at a time. At 40lbs a bag, that's about 19 bags of lime each year for the next 4 years. It is what it is.

A huge word of advice on lime. Spend the extra money and get the pellets. I went cheap and bought 19 bags of powder. The powder got clogged in the spreader immediately so I ended up tossing it in the air out of my wheel barrel. It got on everything including my house, my car, my kid, and I still have the taste in my mouth today. It literally ate my wife's favorite gardening shovel that we used to scoop it out of the bags. Lime is the opposite of acid but does the same darn thing to metal believe it or not.

The pellets will work in the spreader, stay on the ground and not in the wind, and are usually time released to go into the soil instead of wash away.

CONCLUSION

The first year was wasted on my experiments. The second year I did all of the above and my lawn improved ten fold! I fertilized again this fall and expect my lawn to really shine this spring.

4. Toss the spindly furniture. Solid furniture is more likely to stay upright if your parent drops into the chair. You may even consider a lifter recliner as a gift at some point. Then all they do is back into the chair and are then lowered to a seating position.

Kitchen:

1. Check the refrigerator and freezer for expired foods including condiments. There are also canned foods or packaged items in the pantry to check out. When my mother-in-law died there were canned items in her pantry that (according to the sales receipt) she had purchased 18 years previously. Would you want your parent to take a chance?

2. Pots and pans should not be too lightweight that they fly out of the hands or too heavy to lift. Don't forget to check the handles and tighten it necessary.

3. Make sure the stove top and oven is in proper working order. Regulate the temperature and make sure the controls are large enough to read and to grip if the parent has any arthritic problems.

4. Look into purchasing small appliances that will shut-off automatically after a certain period of time, i.e. coffee pot, iron, cook-top, etc.

While the above suggestions are by no means all-inclusive they do offer a starting point to begin the process of safety in your parent's home. Other important areas to consider for safety are the bathroom, bedroom and exterior of the home which will be addressed in a future article.

How to Make a Homemade Kegerator

For anyone who truly loves beer, a HOMEMADE KEGERATOR is what we would all love to have. Even for the most novice person, you can build one with a few tools, and a conversion kit. This project should only take you about an hour or so. For this project I am going to discus a full size refrigerator into a kegerator. There are mini kegerators, and chest kegerators and those that have up to 4 taps, but I will talk about that later in a different projects. But for now, just a single tap on an upright fridge.

Some tools you will need are:

Screwdrivers, Power drill, 7/8" hole saw, Measuring tape, 1 used refrigerator, and most importantly the Conversion kit

Lets start:

1) You will need to find a used upright refrigerator, you should be able to find one about anyplace fairly cheap. When you do acquire one, you should take out all the racks, and clean it good.

2) Find a place you would like to place it. Now we need to make sure it is level, place the level inside or on top of the fridge, you may need to use plywood, 2x2s, and a few shims, to make it even.

3) Before you start drilling a hole for the tap, make sure you put it low enough so the freezer door can open without hitting the tap handle. Start from the inside of the door and measure where you want the tap, then put a mark there, then go to the outside of the door and do the same thing.

4) Now that you have located where to place the tap, you can start drilling. Drill a 1/4" pilot hole through the whole way through the door to get us started.

5) Now take and drill a 7/8" hole on where you started you pilot hole, for your shank.

6) Then secure your shank in the door with the lock nut in your kit, and now you are ready for the tap to go on.

7) Install the drip tray around a foot below the tap by putting screws into the door to hang the tray on.

8) Take one end of your beer hose and push onto the end you the shank, then tighten with a clamp.

9) Take the other end of your beer hose and attach to the keg coupler, and tighten.

10) Now take your air hose and push it onto the nipple sticking out of the keg coupler, and tighten with a screw clamp.

11) Take the other end of your air line and push over the nipple on your regulator and tighten it with a screw clamp.

12) When you fasten the keg coupler on the keg, make sure the handle is pushed back to the "off" position. Then fasten to the keg. Then depress the handle to tap the keg.

13) Open the valve all the way on the C02 tank

14) Pressurize the keg by placing the handle of the shut-off valve on the regulator in the "open" position ( straight up and down).

Some Tips:

When you order your kit you will get step-by-step instructions on what to do. Check your conversion kit to make sure you will get everything you need. All kits are a little different. Your CO2 tank will need to be filled. Welding suppliers or other places in the phone book. Beer should be kept at 36-40degrees. Make sure your keg is cold before you tap your beer, or you may end up with a lot of foam.
